Jaggery making is a simple process comprising crushing of sugarcane for juice extraction, filtration and boiling of juice for concentration and then cooling and solidifying to give jaggery blocks. The juice is extracted from conventional crusher; this is then filtered and boiled in shallow iron pans.

Process Of Jaggery Made

Our team process the crop right at the farm. The juice is extracted from the harvested sugarcane. A massive furnace is dug into the ground. The juice is poured into a large pan that can hold almost 400 to 500 litres and stirred continuously with the fire underneath being constantly adjusted. The fuel of choice is the dried sugarcane bagasse. The boiling sugarcane juice is cleaned using natural clarificant to bring up all the dirt and impurities. It is then filtered and the dregs are used in the farm as manure to fertilise the fields.

The men skilfully and rhythmically stir the liquid, not allowing it to become lumpy or burnt. After about two hours of continuous stirring the thickened juice, now free of impurities is poured into another dry pan sitting on the mud floor. The dexterity with which two men tilt the hot pan and its contents without spilling even a drop of it, is amazing.

Process Of Jaggery Made

In the next hour they turn over the thick liquid with large flat ladles that remind me of oars. This continues till the thick liquid begins to take on a powdery consistency. They add a tiny bit of of natural lime and a little organic coconut oil to it in order to get the right consistency.

Then with a clean long-handled wooden press they press down the jaggery powder section after section, moving around the vat. Their circular motion around the vat turning over the slowly solidifying liquid with geometric precision is like watching a synchronised swimming performance. An hour of this and the powdery raw cane sugar is deftly shifted to bags while the next batch of liquid now is ready for the same treatment.

Process Of Jaggery Cubes Made

Jaggery is unrefined whole sugar. It is processed in a natural way and it is 100% chemical-free. Raw sugarcane juice is boiled and simmered till the water content is evaporated and reaches a semi solid stage. Then it is poured over small moulds or to a big tray and then shaped into big size balls. The moulded jaggery is called “Achu Vellam” in Tamil. The big size balls are called “Urundai Vellam” also known as “Mandai Vellam” or “Pagu Vellam”.

Jaggery contains natural goodness of minerals and vitamins and it is rich in Magnesium, potassium and iron. It is very useful in treating throat and lung infections. It also cures Cough,Indigestion and Constipation. Wherever possible, you can use jaggery instead of white refined sugar.

Process Of Jaggery Balls Made

Jaggery is unrefined whole sugar. It is processed in a natural way and it is 100% chemical-free. Raw sugarcane juice is boiled and simmered till the water content is evaporated and reaches a semi solid stage. It is a manual process. To hold the cloth in our hand and when the mixture is still hot (but cool enough to handle) take enough in your hand to form a golf ball-sized lump. Roll between your palms till smooth. Lay on a greased plate to cool. Repeat till all the mixture is used up. The jaggery balls will soon harden.
